Carrot Fries

I found a recipe for carrot fries that actually "fries" them, but I need to take a break from frying for a bit. I'm trying most things in the oven.  These taste delicious and were nice and tender, but they would have probably had more of a fry "crunch" had they been fried.

Ingredients
  • 7 carrots (cut into matchsticks)
  • 2 tbsp. coconut oil
  • salt and pepper
  • garlic powder

Instructions
  1. Place carrot sticks in a large bown.
  2. Melt coconut oil and pour over carrot sticks.
  3. Lay out in a single layer on a baking sheet
  4. season with salt, pepper, and garlic powder
  5. Bake at 425 degrees until edges get crispy.
